Mustard Caviar Egg Bites
This aesthetic spin on traditional deviled eggs is one that will have everyone oohing, ahhing and mmmmming. They’re tangy and textured, elevating the typical deviled egg to something special while being much simpler to make than they look.
If you’ve ever made traditional deviled eggs, you’ll find that piping the fluffy yolk mixture back in with a pastry bag not only makes them look more elegant, but is also much faster!

Yield: 12 deviled egg halves
Ingredients
- 1 teaspoon salt
- 6 large eggs
- 1 tablespoon yellow mustard, plus more to taste
- 1 tablespoon Miracle Whip, plus more as needed for consistency
- 1 tablespoon white vinegar, plus more to taste
- 4 to 5 teaspoons Mustard Caviar (see page 205)
- 1 large green onion, cut into 1½ inch (4 cm) pieces
- 4 slices bacon, cooked and diced into crumble sized pieces (¼ to ½ inch, or 6 to 13 mm)
Method
- Cook the eggs. Fill a medium pot with water and add the salt and eggs. Bring to a boil over high heat, then reduce the heat to medium high and cook for 10 minutes. Remove the pot from the heat and drain. Run cold water over the eggs for 2 to 3 minutes. Knock each egg against a hard surface a few times to crack the shells, then peel.
- Prepare the egg whites. Using a knife, slice a ⅓ inch (3 mm) sliver off the top and bottom of each egg to create flat edges. Cut the eggs in half widthwise by sliding the knife around the circumference of each egg to remove the egg whites. This ensures the egg whites easily pull away from the yolks.
- Separate the eggs. Place the egg whites on their flat bottoms in a medium serving dish and place the yolks in a separate medium bowl.
- Make the filling. Add the mustard, Miracle Whip and vinegar to the egg yolks. Mix well until the yolks have a stiff but smooth consistency. If the mixture seems dry, add another teaspoon of mustard or Miracle Whip, alternating between the two until it is smooth enough to pipe.
- Fill the eggs. Fill a piping bag fitted with a tip of your choice with the egg mixture. Pipe the mixture into each hollowed egg white, swirling upward and leaving a small gap on one side. Spoon the mustard caviar into the gap.
- Garnish and serve. Top each egg with a piece of green onion and a little crumbled bacon. Enjoy!
