Basil Pistachio Pesto
This pesto uses pistachios instead of pine nuts, and red pepper for a subtly spicy twist on the classic. Add it to PIZZA, SANDWICHES, or WRAPS for a fresh flavour. It’s also great as a marinade for CHICKEN or FISH or drizzled over your favourite SALAD (see Note).
Makes ☺ 1 cup [220 g]
3 cups [60 g] packed basil leaves
½ cup [45 g] freshly grated Parmesan cheese
⅓ cup [45 g] roasted shelled pistachios
3 garlic cloves
1 tbsp honey
¼ tsp red pepper flakes
½ cup [120 ml] extra-virgin olive oil
Salt and freshly ground black pepper
STEP 1
Add the basil, Parmesan, pistachios, garlic, honey, and red pepper flakes to the bowl of a food processor and pulse until blended.
STEP 2
With the food processor running, slowly drizzle in the olive oil and continue to pulse until smooth. Season with salt and pepper to taste.
NOTE
Add 2 to 4 tablespoons of fresh lemon juice or apple cider vinegar to thin this pesto into a salad dressing.
STORE
Refrigerate in an airtight container for up to 5 days.
