Red Fruit Clafoutis
SERVES 4–6

Ingredients
- A little butter for the tin
- 80g (2¾ oz / scant 2/3 cup) plain (all-purpose) flour
- 150g (5½ oz / ¾ cup) granulated sugar
- 1 pinch salt
- 4 eggs
- 250ml (8¾ fl oz/1 cup + 1 tbsp) milk
- 1 tbsp rum (optional)
- 1 tbsp vanilla extract (optional)
- 500g (1 lb 2 oz) red fruits of your choice
Preparing the batter
Preheat the oven to 180 °C fan/200°C/400°F/Gas 6. Grease a deep 25cm (10 in) tin with butter.
Mix the flour, sugar and salt in a large bowl. Add the eggs one by one, mixing each one thoroughly into the batter.
Gradually pour in the milk, stirring continuously to avoid any lumps forming. Add the rum and/or vanilla extract, if using.
Baking
Transfer the batter to the baking tin then spread the red fruit on top. Bake in the oven for 45 minutes to 1 hour: the clafoutis should be golden and set.
Leave to cool a little before serving.
