Snowmallow White Chocolate Mocha

This is a light and creamy mocha with the sweetness of white chocolate and a strong hit of espresso. To make it super festive float these cute snowmen marshmallows on top of your mocha. If you can’t find giant marshmallows, you can use smaller marshmallows and have a ‘melt’ of snowmen on top of your drink.

500 ml/2 cups milk of your choice

80 g/23/4 oz. good-quality white chocolate

½ tsp vanilla bean powder or paste

2–4 shots (60–120 ml/ 2–4 oz.) freshly brewed espresso coffee

TO DECORATE

a few drops of orange food colouring gel

10 g/1/3 oz. good-quality white chocolate, melted

2 giant marshmallows

10 g/1/3 oz. dark/ bittersweet chocolate, melted

cocktail stick/toothpick balloon whisk

SERVES 2

Make the marshmallow snowmen to give the chocolate time to set. Mix a few drops of the orange food colouring gel into the melted white chocolate so that you have an even orange colour. Use a cocktail stick to place two dots of the dark chocolate for eyes and five dots for a mouth on each of the giant marshmallows. Using a second clean cocktail stick use the orange chocolate to draw on noses in the shapes of carrots.

Heat the milk in a saucepan and add the white chocolate and vanilla. Whisk as the chocolate melts to blend it with the milk. Pour the hot coffee into two cups or heatproof glasses and pour over the hot white mocha. Float a snowman marshmallow on top of each cup and serve at once.
